Sauce & Cheese Stuffed Pork Burger




  1. Preheat smoker to 300℉.
  2. Cut colby jack cheese into quarters & place your desired amount of cheese on the 4 patties. Take the other patties and stack on top of each cheese stacked patty. Pinch the sides together and shape into one large patty so the cheese is fully encased.
  3. Generously season patties with Bold & Beefy seasoning and place on Gateway Drum.
  4. Use a spatula to flip the burgers over. Add more Bold & Beefy to season the other side for more flavor.
  5. While burgers cook to desired doneness, lay bacon in a sheet pan and cover in brown sugar. Cook over Gateway alongside burgers for 20-25 minutes.
  6. Move burgers from direct heat into a pan. Cover each patty in Raspberry Chipotle BBQ Sauce, sitting in sauce for 5-10 minutes for a good, tacky glaze.
  7. Butter all sides of buns and place on smoker for 1-2 minutes for a golden brown color.
  8. When everything is done, transfer burgers to the bottom buns and top with bacon, lettuce, tomatoes, pickles, and mayo.
  9. Serve and enjoy!
