Ham, Egg, & Cheese Turnovers
Ingredients:
- 1/4 cup chopped Ham (We choose Marble Ridge Farms!)
- 4 eggs, divided
- 1 tbsp. Sour Cream
- 1/4 tsp. Salt
- 1/2 tsp. Blues Hog All In Seasoning
- 1/2 cup Grated cheddar (or your favorite) cheese
- 13 oz. Puff pastry, cold
- Chopped Scallions, if desired
Instructions:
- Preheat smoker to 300℉.
- In a medium skillet, cook ham over medium heat until it is fragrant and lightly browned.
- Whisk together 3 eggs plus 1 egg white and sour cream. Reserve the extra yolk for later.
- Pour eggs in a skillet with ham and season with Blues Hog All In seasoning. Cook until just barely set and remove from heat.
- Cut cold puff pastry into 6 squares and place on a parchment lined baking sheet. Top with 1/6 of the egg and ham mixture and and a couple tsp. of cheese.
- Fold the corners of the puff pastry over the egg mixture and pinch them together to seal.
- Mix the egg yolk with a tablespoon of water and brush over the pastry. Sprinkle with additional cheese.
- Place on smoker and cook for 18-22 minutes, or until golden and flaky. Serve immediately!
