Cuban Sandwiches

Cut your French bread into 8-10 inch pieces and then cut these pieces in half lengthwise. Slather both the top and the bottom with mustard. Pile on the cheese, pulled pork, ham and pickles and place the top over the bottom to make your sandwich. Heat your drum up to 375º or so, generously lay down some oil or butter on your cast iron skillet and plop down your sandwich.
Carefully place the heavy brick on top and press down Panini style. Leave the weight there and cook for 4-5 minutes or until the bottom is golden brown. Grease a different section of the pan and gently flip your sandwich over being careful not to lose too many goodies. Replace the weight and cook for an additional 4-5 minutes. The cheese should be melted and the bread should be golden brown and crunchy.
Slice your sandwich in half with a heavy, sharp knife and chow down!
