Ingredients
- 
¼ cup Ham, Chopped (We choose Marble Ridge Farms!) 
- 
4 Eggs, 1 Divided 
- 
1 tbsp. Sour Cream 
- 
¼ tsp. Salt 
- 
                
½ tsp. Blues Hog All In Seasoning 
- 
½ cup Cheddar Cheese, Grated 
- 
13oz Puff Pastry, Cold 
- 
Chopped Scallions (if desired) 
Directions
- Preheat Gateway Drum to 300ºF. 
- In a medium skillet, cook ham over medium heat until it is fragrant and lightly browned. 
- Whisk together 3 eggs plus 1 egg white and sour cream. Reserve the extra yolk for later. 
- Pour eggs in a skillet with ham and season with Blues Hog All In Seasoning. Cook until just barely set and remove from heat. 
- Cut cold puff pastry into 6 squares and place on a parchment lined baking sheet. Top with 1/6 of the egg and ham mixture and add a couple tsp. of cheese. 
- Fold the corners of the puff pastry over the egg mixture and pinch them together to seal. 
- Mix the egg yolk with a tablespoon of water and brush over the pastry. Sprinkle with additional cheese.
