Gettin' Basted outdoes themself with this juicy chicken recipe that is every bit as good as a chicken thigh with a fraction of the work!
Ingredients
- 
12 Chicken Drum Sticks 
- 
¼ cup Salt 
- 
2/3 cup Brown Sugar 
- 
2 cups Water 
- 
1 lb. Ice 
- 
1 quart Cold Water 
- 
                
Blues Hog Sweet & Savory Seasoning 
- 
                
Blues Hog Original BBQ Sauce 
Directions
- When you plan on exposing this delicate and quick cooking meat to a dry method of cooking such as an open flame it is a good idea to brine your bird because it adds flavor and moisture. 
- For the brine, mix your salt, brown sugar, and 2 cups of water over low heat until dissolved. 
- Add this mixture to the ice and cold water in a separate bowl, stir together and then dump your chicken in it straight from the package to soak for 2 hours. 
- After 2 hours, drain off the brine, rinse, and dry the drum sticks with paper towels. 
- Generously season your chicken with Sweet & Savory Seasoning on both sides, ending with the skin side up for presentation. 
- Heat up your Gateway Drum to 325ºF and place the chicken over the direct flame with presentation side up being careful not to smear the rub and close the lid. 
- After 30 minutes, flip the chicken over and place the lid back on. 
- After another 30 minutes, take your chicken off the Gateway and bring them in for a rest. 
- Heat up the Original BBQ Sauce in a saucepan and then pour it into a glass. 
- Grab the legs by the end, dunk them one at a time in the sauce and place them directly on a rack. 
- Place the rack back in the Gateway for 5 minutes to lightly set the sauce.
