Fire up Go2 Gateway, place diffuser on bottom rack, and grate on top.
Trim brisket and inject with Beef Marinade. Season with High Flyin’ Chicken, Ritas & Fajitas, and Rodeo Rub. Flip and repeat on other side. Let sit for 30 minutes to allow seasonings to marinate.
Place on drum at 250-300℉ for 1 ½ hours, flip and leave for 30 more minutes. Remove from heat and wrap in foil with leftover marinade and place back on drum for 2 hours.
Remove from heat and let rest for 30+ minutes. Slice, serve, and enjoy!
