Ingredients

¼ cup Ham, Chopped (We choose Marble Ridge Farms!)

4 Eggs, 1 Divided

1 tbsp. Sour Cream

¼ tsp. Salt
-
½ tsp. Blues Hog All In Seasoning

½ cup Cheddar Cheese, Grated

13oz Puff Pastry, Cold

Chopped Scallions (if desired)
Directions
Preheat Gateway Drum to 300ºF.
In a medium skillet, cook ham over medium heat until it is fragrant and lightly browned.
Whisk together 3 eggs plus 1 egg white and sour cream. Reserve the extra yolk for later.
Pour eggs in a skillet with ham and season with Blues Hog All In Seasoning. Cook until just barely set and remove from heat.
Cut cold puff pastry into 6 squares and place on a parchment lined baking sheet. Top with 1/6 of the egg and ham mixture and add a couple tsp. of cheese.
Fold the corners of the puff pastry over the egg mixture and pinch them together to seal.
Mix the egg yolk with a tablespoon of water and brush over the pastry. Sprinkle with additional cheese.
Place on the Gateway and cook for 18-22 minutes, or until golden and flaky. Serve and enjoy!
